Fresher than Fresh: Simple Caprese Salad

Simple Caprese Salad

There comes a time when all you want is something fresh and refreshing.  But, you don't want to be boring!  This caprese salad is anything but boring, but is incredibly simple.  Combine fresh tomatoes, oil and spices plus our cheese, and bam - you've got yourself a fresh, and simple, appetizer or meal.  Enjoy!

Serves: 4

Ingredients

6-8 Tbs of good olive oil

1 tub of cherry tomatoes

Sea salt

Coarse black pepper

1 vine of large heirloom tomatoes, cut into slices 

1 log of Ferndale Farmstead Fior Di Latte fresh mozzarella

10-12 basil leaves

Directions:

Wash cherry tomatoes, shake dry.  Lightly coat the cherry tomatoes with 1 Tbsp. oil in a bowl, then season with salt and black pepper (if desired).  Set aside.

Slice tomato and arrange slices on a serving platter, with each slice overlapping the other.  Arrange the mozzarella over the sliced tomatoes and lightly season the spread with salt. Distribute the cherry tomatoes over the salad and drizzle with 6 or so Tbsp. of the olive oil, then season with black pepper. 

When ready to serve, lay the fresh basil on the salad and season with a pinch of salt and another drizzle of oil, if desired.  And Voilà, a simple and fresh salad!
