Our Fresh Cheese - Formaggio
Our Fresh Cheese Collection is a group ranging from fresh mozzarella, which is ready the day we make it, to the semi-aged Caciotta. Fior di Latte is the ring leader in our notoriously Italian family of Pasta Filata style cheeses, also known as“stretched-curd.” From Provolone to Scamorza, this type of cheese will melt fantastically over almost any cooked dish.
FIOR DI LATTE (Fresh Mozzarella)
Fior di Latte, or "blossom of milk" translated in English, is a fresh, whole milk mozzarella with a delicate flavor and texture. We make ours the old fashioned way using Italian cultures instead of vinegar to give you the full mozzarella flavor that this well-known cheese deserves. Makes a yummy grilled cheese, quesadilla, pizza, or whatever your imagination desires.

Its origins lie in Sicily, with the original Provolone Ragusano being made in a rectangular form, rather than the cylindrical version commonly found today. We created ours in this shape, with respect to its original producers! We hang them to age, allowing for flavors of pure milk essence to emerge in this mild and creamy cheese perfect for cooking and sandwiches.

National Hot Pastrami Sandwich: Ruben Sandwich
Today is National Hot Pastrami Sandwich Day and we decided to share Cheryl and Dave's twist on the classic Ruben Sandwich. This recipe calls for both quality meat and cheese so they used Old World Deli's thick cut house cured pastrami for extra flavor and our smoked provolone cheese.
FARMSTEAD CURD
We stand apart from conventional mozzarella curd in several key ways and are committed to:
• Using traditional cheesemaking methods that emphasize the clean flavor of pure fresh milk from our family owned and operated dairy
• Sourcing our ingredients from our mentors in southern Italy near Naples in the Campania region, which is known for the best mozzarella around the world
• Avoiding the use of vinegar or acetic acid
• Highlighting the rich grass farming of the Puget Sound - avoiding the use of whiteners or dyes such as Titanium Dioxide currently involved in the manufacture of fresh mozzarella
• Using only single-source milk from our farmstead located in Ferndale, WA in order to maintain the highest degree of traceability and quality control from Seed to Cheese
• Using unstandardized, whole milk from our mixed herd of Jersey and Holstein cows - more rich in butterfat and protein in order to achieve a creamy mouthfeel and superior flavor
FARMSTEAD MOZZARELLA
Our mozzarella in its diamond cut shape is the most convenient form as our Pizza Cheese. We use traditional cheesemaking methods that emphasize the clean flavor of pure fresh milk from our farm. We avoid the use of whiteners or dyes such as Titanium Dioxide which currently can be found in the manufacture of conventional fresh mozzarella. We avoid the use of anti-caking agents, preservatives such as Cellulose, or any other additives to ensure a high-quality ingredient for your restaurant.

SMOKY SCAMORZA
Smoky Scamorza is a three-time Award winning signature Italian cheese aged on ropes, a technique used by artisans for hundreds of years, gives it the characteristic pear-shaped body, which is sure to stand out on any cheese plate. A relative of our Fior di Latte mozzarella, but with a bolder and more buttery flavor. We cold smoke our Scamorza with our in-house signature blend of real wood smoke. A homage to the Pacific Northwest. Great melted on hamburgers, grilled cheeses, and of course pizza!

Our Aged Cheese - Cacio
Our Aged Cheese Collection is where you will find our more firm and complex cheeses. We care for the wheels as they mature in our affinage program, flipping and washing them daily. Each batch has its distinctions that become more pronounced over time. Some like Asiago are traditionally preferred Fresco, while others gain status as a Reserve. Once at their peak, we hand label each wheel and prepare them for the road to market.
CACIOTTA
A traditional Italian table cheese handcrafted right here in the Pacific Northwest. A mild yet irresistible flavor with a soft texture, this cheese is tasty and versatile. We age these small wheels for a short time to give them a safe and natural yellow rind. A great pairing cheese!

ASIAGO FRESCO
Our Asiago Fresco uses cow’s milk that is cheese pressed into a thin wheel with a firm and somewhat open texture. Our Asiago Fresco is styled after the Pressata style of this cheese in Italy which is typically only aged 2-3 months. The whole milk gives this young version a sharp and grassy flavor.

This recipe was a fun one because it calls for a childhood favorite ingredient...puff pastry dough! This snack is perfect for when you don't have enough time to spend hours and hours in the kitchen. The original recipe called for cheddar cheese but we swapped that out with our Asiago Fresca cheese.
KASSERI
The flavor profile of this aged crumbly cheese is distinctly salty and is topped with a piquant spike like a long aged provolone. A semi-aged Mediterranean cheese. It really shines from the back of the house as an ingredient in your future pastas, pizzas, salads, or dish toppings. Excellent grating style cheese!
FONTINA
A rich and creamy aged cheese with a smooth, almost silky texture. Our whole milk version of this cheese has a natural rind as opposed to the washed-rind style produced in the valleys of northern Italy. complex floral and sweet flavor with butterscotch or brown sugar notes, and less pungent than the washed rind versions of this cheese.
